It’s Strange, But Tasty

Imagine someone dunking a grilled cheese in applesauce before taking a big bite. Sounds wild right? While many food combos might sound funky, opinions might change when that combination of texture and flavor come together just right. It might seem like a food crime to put together two foods that are completely opposites and that you’ve never heard in the same sentence, but sometimes these food combos make the best ones. The thing is that our brains crave contrast, which is why these unexpected food combos work;however, the science behind it is more complicated.

A study from Forbes attributes the apparent satisfaction of these combos to the concepts of anticipation and expectation. For example, when someone is about to eat steak and red wine they might have a high expectation of how the food will taste based on both presentation and perception. On the other hand, your pickles and ice cream might not have as high of an expectation cognitively, leading to a greater release in dopamine as it exceeds your expectations. Noticeably, certain food pairings have become popular over the years and the same study attributes these likings to that middle ground combination of weirdness perfectly balanced with the familiarity of both the items. Although a vague finding, it sheds some light on why these food combinations might work. Additionally, a few studies reveal why these “odd couple” pairings might taste so good. The human taste bud tastes five primary flavors, kind of like how humans have five senses. A combination of those senses can invoke certain emotions or responses. The taste bud level includes five primary flavors, sweet, salty, sour, bitter, and savory. Tastes can be sensed by all parts of the tongue, and when they overlap people’s brains often interpret the flavor as satisfying. Strikingly, different flavors can create an exhilarating balance. For example, pizza and ranch work well because savory tomato complements the tangy and creamy dressing. But to be honest, a lot of these combos listed above might sound appetizing to many people.

There is a laundry list of tastes that are much less known, but have great potential. A 2026 poll showed some notable winners that really push the boundaries of a normal snack. For starters, mac and cheese with mustard is a big one because the mustard cuts through the heavy dairy.

Then you have ice cream and soy sauce. It sounds like something you’d eat for a dare, but the saltiness actually makes it taste like a deep caramel. Avocado and chocolate is another favorite since the fattiness in the avocado makes a chewy and rich texture. Actually, putting avocado in chocolatey recipes like brownies or fudge is quite popular. It’s a great way to sneak another food group into your desserts! For people who like a crunch, Cheez-It’s and Nutella proved the salty-sweet mix is still a go-to, and pickles and honey ended up being a weirdly addictive mix of vinegar and sugar. At the end of the day, food is subjective and the rules are meant to be broken.

Every new dish starts off with trying something new; something that was not known or not the norm. The best advice is to just try a funky pairing for yourself. It might sound wrong at first, but it could easily turn out to be your new favorite food combo!
